Delicious and nutrient dense high-protein gym junkie Hoppa penne pie.

Serves 6-8

INGREDIENTS

  • 250g (1 packet) Hoppa Penne Pasta
  • 2 tbls olive oil
  • 1 brown onion, diced
  • 500g beef mince
  • 2 tsp crushed garlic
  • 2 tin diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 cup cheddar cheese, grated
  • 1 cup ricotta cheese
  • 3 eggs

METHOD

STEP 1
Preheat oven to 190C. Fill a saucepan with water and bring to the boil. Add the full packet of Hoppa Penne Pasta to boiling water and cook for 6 minutes (a few minutes less than packet instructions). Drain and set aside to cool.

STEP 2
In another saucepan, heat olive oil on medium heat and sauté onion until soft. Add in the beef mince and break up with a wooden spoon and cook until browned. Add crushed garlic and herbs and cook for a further 2 minutes. Add diced tomatoes and simmer for 10 minutes until the liquid has reduced and beef mixture has thickened.

STEP 3
In a large bowl, add the beef mixture, cooked pasta, cheeses, eggs, and salt and pepper. Mix well to combine. Keep a little bit of the grated cheddar aside. Place mixture into a non-stick, round cake tin, top with remaining grated cheese and bake for about 20 minutes or until pie is a nice brown colour.

STEP 4
Let cool before removing from the tin and cut into 8 wedges.
