A delicious guilt-free chocolate cricket cake. This recipe is gluten-free and refined sugar-free!

INGREDIENTS

DRY INGREDIENTS

  • 1 cup Almond meal
  • 1/3 cup Rice flour
  • 1/3 cup Cacao powder
  • 3/4 tsp Baking soda
  • 1/2 tsp  Baking powder
  • 3 tbsp Hoppa cricket baking powder
  • 1/2 tsp Pink salt

WET INGREDIENTS

  • 2 Eggs
  • 1 tbsp Vanilla extract
  • 1/2 cup Zucchini (grated)
  • 1/4 cup carrots (grated)
  • 1/4 cup choc chips (77%)
  • 1/4 cup extra virgin olive oil
  • 4tbsp honey

METHOD

  • Put the ingredients in a food processor until you get a creamy mixture.
  • Put it in a loaf tin
  • Bake at 160C for 30-35 min
